Ingredients

  • 6-8 tbsp Cashew cream or your dressing of choice
  • 1 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
  • 2 cups shredded chicken
  • 1 sweet potato roasted
  • 1 cup cooked couscous
  • 2-3 cups mixed greens

Instructions

  1. Cook your chicken, sweet potatoes, and couscous in your method of choice. I cooked my chicken in the Instant Pot and sweet potatoes in the oven.
  2. In two 750mL mason jar, layer this order: dressing, nuts & seeds, chicken, roasted sweet potatoes, couscous, and mixed greens.
  3. Store for up to 4 days in the fridge.
