Summer grilled corn salad
Summer grilled corn salad features fresh corn that is boiled briefly, then brushed with olive oil and grilled to add smoky flavor. The kernels are sliced off and combined with ripe tomatoes, red onion, fresh basil, and crumbled feta. Dressed simply with olive oil and lemon juice, the salad offers a balanced taste of sweet, tangy, and savory notes. It can be made a few hours ahead and holds well for summer gatherings.
Ingredients
- 6 corn shucked, ears, fresh
- 2 tablespoons olive oil
for the salad
- 1 red onion finely chopped
- 2-3 cups tomatoes chopped, ripe
- 1 cup feta cheese crumbled
- 1 cup basil chopped, fresh
- 2 tablespoons olive oil
- lemon juice of 1
- black pepper to taste
- salt to taste
Instructions
- Cook the corn in a pot of boiling water for 10 minutes.
- Drain then brush with olive oil and grill in a hot grill pan (or over hot coals).
- Remove and allow to cool for 10 minutes then slice the kernels off the cobs.
- Combine the grilled corn kernels with the remaining salad ingredients.
- Dress with olive oil, lemon juice, salt and pepper and mix to combine.
Notes
- Prepare the salad up to four hours ahead; dress with olive oil and lemon juice immediately before serving for best texture.
