Ingredients

  • 4 cups water
  • 1 3/4 cups fresh lemon juice
  • 11 oz can peach nectar
  • 1 cup superfine sugar or regular granulated sugar
  • 4 sprigs of fresh thyme or lemon-thyme
  • Ice cubes
  • Lemon slices for garnish
  • additional thyme sprigs for garnish

Instructions

    Cup of Yum
  1. To a large pitcher or trifle bowl, add water, lemon juice and peach nectar.  Add sugar and stir together until sugar dissolves.  Stir in thyme sprigs.
  2. Cover with plastic wrap and refrigerate at least 2 hours.  Serve in glasses over ice, with lemon slices and more thyme sprigs if desired.

Notes

  • Recipe makes approximately 64 oz.
  • To use fresh peaches:
  • Add 3 sliced peaches and 1 cup water to a food processor or blender.  Blend until smooth.  Place a mesh sieve over a large mixing bowl and pour peach puree into the sieve. Use the back of a large spoon to push the puree around so the liquid falls through the sieve and solids/peach skin stay inside the sieve.  Discard sieve and use peach liquid in mixing bowl in place of the peach nectar in the recipe.  Feel free to adjust the amount of peaches according to your tastes.
