Summer Salad with Burrata & Honey
This summer salad combines fresh cucumber, tomato, radish, celery, apple, and strawberries with creamy burrata cheese, all enhanced by a honey-mustard balsamic dressing. The crisp vegetables and sweet fruit balance the rich, soft texture of the burrata, while basil leaves add a fresh aromatic note. The dressing blends olive oil, grapeseed oil, balsamic vinegar, honey, and mustard for a harmonious finish that coats the ingredients without overpowering them.
Ingredients
- 4 pieces burrata cheese
- 1 cucumber diced
- 2 diced tomatoes
- 5 radish diced
- 3 spring onion diced
- 2 celery stalks
- 1 apple
- 3 ½ oz strawberries
- 15 basil leaves
- 1/2 cup balsamic vinegar
- 2/5 cup olive oil
- 1/2 cup grapeseed oil
- 1 teaspoon mustard
- 4 tablespoons honey
- salt
- black pepper
Instructions
- Mix all the liquid ingredients including the honey & mustard together and blend well.
- Add salt, pepper and sugar depending on taste preferences.
- Mix the ‘green’ ingredients in a bowl and add the salad dressing.
- Put the burrata on top and decorate with basil leaves.
