Summer Zucchini and Hominy
Make delicious Mexican-style hominy and zucchini with ingredients like onion, garlic, jalapeño, tomatoes, lime, and cilantro for a new favorite savory, summery side! Plus, it's ready in under 30 minutes!
Ingredients
- 1 tablespoon of oil
- ½ cup onion diced, yellow or red
- 4 garlic minced, cloves
- 4 ½ cups zucchini diced
- 1 hominy drained, canned 20-ounce
- ½ cup cherry tomato halved
- ½ to 1 lime juiced (depending on how much sourness you prefer)
- 1 ½ teaspoon chili powder
- ½ teaspoon salt
- 3 tablespoons cilantro minced
Instructions
- In a large pan (with a lid) over medium-high heat, heat the oil. Add onion and garlic and saute for 2 to 3 minutes.
- Add the zucchini, hominy, jalapeno, tomatoes, lime juice, chili powder, and salt, stir, lower the heat to low, and cover with a lid for 15 minutes.
- Stir in the minced cilantro and serve as a side dish.
Notes
- Customize the heat level: Make the sauteed corn and zucchini milder with a mild pepper or use less jalapeno. Add jalapeño seeds or use a hotter pepper (serrano, poblano, etc.) for more heat.
- Season to taste: Taste and adjust the levels of lemon/lime juice, salt, and chili powder.
