Summertime Pasta
This Summertime Pasta features a medley of fresh summer vegetables like zucchini, cherry tomatoes, and olives combined with pasta and a light olive oil base. Ingredients
- 1 pound pasta your choice
- ¼ cup olive oil
- 1 small onion yellow or red, diced
- 4 garlic cloves, minced
- 1 medium zucchini quartered lengthwise and sliced
- 2 cups cherry tomato
- 1 ½ cups green olives sliced
- 1 ½ tbsp olive brine
- 1 tbsp basil fresh, minced
- salt to taste
- black pepper to taste
Instructions
- In a medium pot over medium-high heat, cook the pasta according to the package instructions.
- In a separate pan, heat the oil. Add in the onion and garlic and saute for 1 minute, then add zucchini and saute for another 2 to 3 minutes, until the veggies become tender.
- Stir in the tomatoes and cover the pan for 1 minute, stir and then cover for another minute.
- Stir in the olives, olive brine, pasta, and basil, and serve. Can be eaten cold or warm.
