Summertime Pasta

Ingredients

  • 1 pound pasta your choice
  • ¼ cup olive oil
  • 1 small onion yellow or red, diced
  • 4 garlic cloves, minced
  • 1 medium zucchini quartered lengthwise and sliced
  • 2 cups cherry tomato
  • 1 ½ cups green olives sliced
  • 1 ½ tbsp olive brine
  • 1 tbsp basil fresh, minced
  • salt to taste
  • black pepper to taste

Instructions

  1. In a medium pot over medium-high heat, cook the pasta according to the package instructions. 
  2. In a separate pan, heat the oil. Add in the onion and garlic and saute for 1 minute, then add zucchini and saute for another 2 to 3 minutes, until the veggies become tender.
  3. Stir in the tomatoes and cover the pan for 1 minute, stir and then cover for another minute.
  4. Stir in the olives, olive brine, pasta, and basil, and serve. Can be eaten cold or warm.

  • This pasta can be prepared in advance and served cold or warm, perfect for parties or potlucks.
  • Use fresh summer vegetables available to you for variation and freshness.
  • Choosing rotini pasta helps to catch the dressing and flavors better.
