Sun Dried Tomato Pesto
Sun dried tomato pesto makes a delicious appetizer, but can be used on pasta and pizza too.

Ingredients
- ¾ cup dry pack sun dried tomatoes
- ¾ cup hot water
- ½ cup fresh basil leaves
- 3 cloves garlic
- ¼ cup toasted pine nuts
- ½ cup shredded Parmesan cheese
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp granulated sugar
- 4 tbl olive oil
- 3 tbl cold water
Instructions
- Soak sun dried tomatoes in hot water for 4-5 minutes.
- Drain water off tomatoes.
- Add all ingredients to a food processor.
- Blend until all ingredients are combined and chopped.
- Will be a bit chunky.
- Add more water TBL at a time until you get a texture you like.
- Spread on toasted baguettes, pasta, or pizza dough.
