Sun Dried Tomato Pesto

Sun dried tomato pesto makes a delicious appetizer, but can be used on pasta and pizza too.

Ingredients

  • ¾ cup dry pack sun dried tomatoes
  • ¾ cup hot water
  • ½ cup fresh basil leaves
  • 3 cloves garlic
  • ¼ cup toasted pine nuts
  • ½ cup shredded Parmesan cheese
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp granulated sugar
  • 4 tbl olive oil
  • 3 tbl cold water

Instructions

    Cup of Yum
  1. Soak sun dried tomatoes in hot water for 4-5 minutes.
  2. Drain water off tomatoes.
  3. Add all ingredients to a food processor.
  4. Blend until all ingredients are combined and chopped.
  5. Will be a bit chunky.
  6. Add more water TBL at a time until you get a texture you like.
  7. Spread on toasted baguettes, pasta, or pizza dough.
