Sun Dried Tomato Pesto Sauce
Homemade sun-dried tomato pesto sauce is exploding with flavors and is very easy to make. Also called pesto rosso or red pesto it’s a vibrantly colored, deeply flavored condiment from Sicilian cuisine.

Ingredients
- 1 ½ cup sun-dried tomatoes
- ½ cup roasted raw almonds
- ¼ cup Parmesan Cheese freshly grated
- 3 cloves garlic
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- ¼ teaspoon red chili flakes optional
- ½ cup extra virgin olive oil use more if needed
- 1 cup fresh basil leaves
Instructions
- Add sun-dried tomatoes, fresh basil, roasted almonds, freshly grated Parmesan cheese, garlic cloves, salt and pepper to taste, and red chili flakes to a food processor.
- Close the lid and run the processor. With the processor running slowly pour extra virgin olive oil into the processor.
- Grind it to your desired consistency. You can leave it a little chunky or make it smoother.
- Store in air tight container in the refrigerator.

- Blitz pesto to either to chunky consistency or smooth consistency.
