Sunomono (Kiyuri Namasu)

Sunomono (の 物) or kiyuri namasu is a variety of namasu that is a Japanese dish made of raw vegetables (here cucumber), finely sliced and marinated in vinegar.

Ingredients

  • 4 cucumber
  • 1 tablespoon salt
  • 1 teaspoon ginger finely chopped
  • ½ cup rice wine vinegar
  • ½ lemon , freshly squeezed
  • 2 tablespoons caster sugar
For the decor
  • 2 tablespoons white sesame seeds , roasted

Instructions

  1. Partially peel the cucumbers, leaving strips of green and cut into very thin slices.
  2. Add the salt to the cucumbers and mix by hand.
  3. Reserve for 45 minutes, or until cucumbers are soft.
  4. Transfer the cucumbers to a colander and extract as much liquid as possible.
  5. Mix the lemon juice, sugar and vinegar in a large bowl until the sugar dissolves. Add the drained cucumber and mix to coat.
  6. Add into small bowls and garnish each serving with sesame seeds.
  7. Reserve in the refrigerator for 1h30 before tasting.
