Super Bowl Turkey Chili

Ingredients
- 2 tablespoons olive oil
- 5 cloves garlic minced
- 2 large bell peppers diced
- 1 yellow onion diced
- 3 carrots diced
- 10 ounces mushrooms thinly sliced
- 1 ½ teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon oregano
- Kosher salt and freshly ground black pepper to taste
- 1 pound ground turkey
- 1 ½ cups beer
- 2 (14.5-ounce) cans diced fire roasted tomatoes
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 1 (15-ounce) can red kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
Instructions
- Heat olive oil in a Dutch oven or large pot over medium high heat. Add garlic, bell peppers, onion, carrots, and mushrooms. Cook, stirring frequently, until carrots begin to soften, about 8-10 minutes.
- Stir in cumin, chili powder and oregano; season with salt and pepper, to taste.
- Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks.
- Stir in beer and reduce heat to low; simmer, covered, until slightly thickened, about 15 minutes. Stir in tomatoes and beans and simmer until thickened, an additional 15-20 minutes.
- Serve immediately.
