Super Easy Mexican Rice (Spanish Rice)

Ingredients
- 1 cup long grain white rice
- 2 tablespoons butter
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon onion powder
- 8 ounces tomato sauce
- 2 cups chicken broth
Instructions
- In a large skillet (one that has a lid) over medium heat, melt butter.
- Stir in cumin, chili powder, salt, onion powder and rice for 1-2 minutes.
- Whisk in tomato sauce and chicken broth.
- Bring a boil, then reduce to a high simmer.
- Cover and cook for 25 minutes (see note).
- Uncover, fluff with a fork, and serve.

- *Vegetarian option: sub vegetable broth for the chicken broth
- *When simmering the rice - if you are not using a good nonstick pan, be sure to give it a stir every 5-10 minutes to keep it from sticking to the bottom of your pan.
