Ingredients

  • 1/3 cup unsweetened applesauce
  • 1/2 cup melted honey
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/3 cups ripe bananas mashed VERY ripe
  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup hemp hearts

Instructions

    Cup of Yum
  1. Preheat your oven to 325 °F. Grease a standard 9x5-inch loaf pan.
  2. Whisk together the flour, salt, baking powder and baking soda in a small bowl and set aside.
  3. In a large bowl, beat the applesauce and honey together with a hand mixer. Add the eggs, and beat well. Stir in the bananas and the vanilla.
  4. Mix in the dry ingredients by hand until combined, then mix in the hemp hearts.
  5. Spread the batter out evenly in the prepared pan.
  6. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 60-75 minutes.
  7. IF the top is browning too fast, cover the top with tinfoil. You can also turn the heat up to 350 °F at the end of the baking time to bake hotter for the last 10-15 minutes.
  8. Cool on wire rack for 1/2 hour before slicing.

Notes

  • Because I use honey you have to bake low and slow for a good hour so the honey doesn't burn the loaf. If you are finding that it's not baked around the 60 minute mark, crank your oven to 350, cover the top with tinfoil and continue to bake until done!
