Superfood Cranberry Bliss Protein Balls

Ingredients

  • 7 date pitted and soaked, large, Medjool
  • 1/3 cup dried cranberries soaked*
  • 1/3 cup beets chopped, cooked
  • ½ cup almond flour
  • ½ cup coconut + more for rolling, unsweetened, shredded
  • ¼ cup almond chopped, raw
  • ½ teaspoon vanilla extract pure
  • 1/4 teaspoon ground cinnamon
  • Pinch salt sea salt

Instructions

  1. Add all of the ingredients for the energy balls to the food processor, and turn it on. Process until a thick paste forms (note: you will need to stop the food processor several times to scrape the sides with a rubber spatula). If the mixture is thick and crumbly, add a small amount of water (1 tablespoon at a time) until the mixture presses together easily. If the mixture is too gooey, add almond flour until thickened and the right consistency to make balls.
  2. Transfer this mixture to a sealable container and refrigerate 15 minutes to allow mixture to chill and set up.
  3. Form 12 to 14 balls out of the cranberry bliss mixture, then roll in shredded coconut or chopped nuts.
  4. Store energy balls in a sealed container in your refrigerator for up to 5 days.

Notes

  • * I recommend using dried cranberries that are sweetened only with juice and/or organic dried cranberries for best results.
