Surf and Turf (NY Steak and Shrimp)

Surf and Turf an easy, indulgent dinner of pan seared NY Steak and Shrimp served in a rich butter sauce. Great for special occasions!

Ingredients

Steak:
  • 2 tablespoons butter unsalted
  • 2 prigs thyme fresh
  • 2 New York steak about 24 ounces
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper coarse ground
Shrimp:
  • 1/2 pound Shrimp , 13-15 count, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground
To Finish:
  • 1/2 cup beef broth
  • 1 tablespoon butter unsalted

Instructions

  1. Preheat oven to 450 degrees.
  2. Add 2 tablespoons of butter to a cast-iron skillet (just bigger than your steaks) on high heat.
  3. Season steaks all over with salt and pepper, then add to hot skillet.
  4. Sear the steaks on each side for 3 minutes until browned, then place in the oven for 4 minutes for rare, 5-6 minutes for medium, or more for well done.
  5. Remove from oven, remove steaks from pan, and place onto a plate tented with foil to rest.
  6. Let the pan cool for 5 minutes then add in olive oil on high heat.
  7. Cook shrimp for 1 minute on each side.
  8. Remove shrimp from pan.
  9. Add beef broth, stir well to remove bits from the bottom of the pan and let reduce, on medium heat for 5 minutes until thickened.
  10. Turn off heat, add in remaining tablespoon butter and stir until melted.
  11. Serve sauce over steaks and shrimp.
