Ingredients

  • 2 steaks I like to use Ribeye or NY Strip
  • 1 tbsp avocado oil Or, any high heat cooking oil
  • 6 tbsp unsalted butter
  • 8 cloves garlic
  • 6 sprigs rosemary
  • salt and pepper to taste
For the Mashed Potatoes
  • 3 lbs red potatoes
  • 1 1/2 cup heavy cream
  • 8 tbsps butter
  • 1 cup Parmesan Cheese
  • 3 tsps salt
  • 1 tsp pepper
  • 2 tsps garlic powder
  • 2 tsps onion powder
For the Creamy Shrimp
  • 1 lb Shrimp I like to use Jumbo Shrimp! 13-15 for best results!
  • 1 cup heavy cream
  • 3 tbsps butter
  • 2 tbsps parsley

Instructions

  1. Allow steaks to rest at room temperature for 20 minutes. While steaks are resting, make your cajun compound butter.
  2. Season steak with salt and pepper completely. Your steaks should be seasoned very well! Let them rest for 10 minutes
  3. Add avocado oil and 2 tbsps of butter to a hot cast iron skillet.
  4. Sear Steak for 2 minutes, and flip. Your steak should be be beautifully seared.
  5. Add additional 2 tbsp of butter, garlic and rosemary, and bask the excess butter over the steak with a spoon. Keep basking continously for 3-5 minutes.
  6. *optional step* Remove from pan and finish cooking in the oven at 375 degrees until the level of doneness required. Use a thermometer to test the level of doneless If you prefer a rarer steak, let your steak rests while you cook your shrimp.
For The Mashed Potatoes

  1. Cut potatoes into fours, boil.
  2. In a small sauce pot, bring butter, spices, heavy cream and Parmesan cheese to a light boil.
  3. Once potatoes are soft, strain them and slowly add in milk mixture while simantousely mashing the potatoes until you have a creamy consistency.
  4. Garnish with parsley
For the Shrimp
  1. Pat dry shrimp. Sautee shrimp on medium heat in butter for 2-3 minutes.
  2. Add in heavy cream, parmesean cheese and parsley. Simmer on low heat until shrimp is fully cooked and sauce is thickened.
