Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 1/2 pounds ground beef
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped onion
  • 1/4 teaspoon ground ginger
  • 3/4 cup finely crushed saltine cracker crumbs

Instructions

  1. Preheat the oven to 350°F and lightly grease a 5x9-inch loaf pan.
  2. Press the brown sugar into the bottom of the loaf pan.
  3. Spread the ketchup over the sugar.
  4. In a mixing bowl, combine all the remaining ingredients, mix thoroughly, and shape the mixture into a loaf.
  5. Place the loaf on top of the ketchup.
  6. Bake for 1 hour or until the juices run clear and the internal temperature is 155°F.

Notes

  • The key to perfect texture is handling the meat mixture gently. Overmixing compacts the proteins and results in a dense, tough loaf. Mix just until ingredients are incorporated, then stop. When forming your loaf, press lightly rather than packing it tight. For extra moisture insurance, tent with foil for the first 30 minutes of baking, then remove to allow the top to brown for the final 30 minutes.
