Sweet-and-Smokey Cranberry Chipotle Ketchup

A sweet-and-smoky ketchup that's perfect with sweet potato fries. Adapted from Cranberry Ketchup (Cooking Light).

Ingredients

  • 1 ⅔ cup fresh cranberries
  • ½ cup brown sugar packed
  • ½ cup shallots chopped
  • ¼ cup cider vinegar
  • ¼ cup water
  • ½ tsp salt
  • 2 tsp minced chipotle chiles in adobo sauce more or less is fine—use what you're comfortable with

Instructions

    Cup of Yum
  1. Combine all ingredients in a medium saucepan over medium-high heat. Bring to a boil and cook 10 minutes or until thick, stirring occasionally.
  2. Remove from heat and allow to cool for approximately 10 minutes.
  3. Process until smooth in a blender or food processor (I used an immersion blender).
  4. Transfer to bowl; cover and chill.
