Instructions

    Cup of Yum
  1. Preheat oven to 450° F. Line a baking sheet with parchment paper or foil. Spray it with cooking oil.
  2. Combine all of the ingredients for the meatballs in a bowl and use your hands to mix everything together. Use a cookie scoop or tablespoon to scoop out tablespoon sized amounts of the meat mixture. Roll into balls and place them on the prepared baking sheet. Spray the tops of the meatballs with cooking spray and then bake at 450° F. for 10-12 minutes or until golden and cooked through.
  3. In a bowl or measuring glass, whisk together the ingredients for the sweet and sour sauce. Be sure the cornstarch is dissolved and there are no lumps.
  4. Add a little olive oil to a large skillet and heat it over medium-high heat. Add in the onion and peppers and sauté them until they’re crisp tender. Add the pineapple and meatballs to the skillet and cook for another minute.
  5. Pour in the sweet and sour sauce and stir everything together until coated. Simmer over medium-low heat until the sauce thickens and everything is warmed through.
  6. Serve on top of rice and garnish with sliced green onions.
