Ingredients

Sweet & Sour Sauce:
  • 2 Tbsp honey
  • 3 Tbsp unsweetened ketchup
  • ⅓ cup rice vinegar or cider vinegar
  • ¼ cup coconut aminos*
  • 1 Tbsp Sriracha
  • 2 tsp sesame oil
  • 2 tsp tapioca flour
Meatballs:
  • 1 lb ground beef
  • 1 large egg well beaten
  • 3 cloves garlic
  • 1 Tbsp Coconut aminos
  • ½ tsp sea salt
  • 3 Tbsp avocado oil for cooking
For Serving:
  • 2 tsp sesame seeds
  • 3 stalks green onion chopped

Instructions

    Cup of Yum
  1. Add the ingredients for the sauce to a small blender and blend until completely smooth. Note: if you don’t own a small blender, whisk the ingredients together in a bowl or measuring cup until combined.
  2. Add the ingredients for the meatballs to a mixing bowl and use your hands to mix everything together until well-combined. The mixture will be sticky but should still hold together nicely.
  3. Form 7 to 8 meatballs out of the mixture.
  4. Preheat the oven to 325 degrees F.
  5. Heat avocado oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, carefully place the meatballs in the skillet, leaving plenty of room between each of them to ensure even cooking.
  6. Sear on two sides for 3 to 4 minutes each.
  7. Turn off the heat and pour in the sauce. Use a spoon to stir around the meatballs and ladle sauce over the meatballs until they are all well-saturated in sauce.
  8. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until meatballs are cooked through.
  9. Serve with your choice of sides and enjoy!

Notes

  • *you can also use liquid aminos. If using liquid aminos, add another tablespoon of honey to the sauce (no need to add honey to the meatballs)
