Ingredients
- 6 cups kale roughly chopped
- 2 medium apple diced
- 3/4 cup craisins
- 1/2 cup almonds toasted
- 3/4 cup feta cheese crumbled
Dressing
- 1/2 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- 2 teaspoons white wine vinegar
- 1 teaspoon lemon zest
- 2 teaspoons garlic about 2 cloves, minced
- 2 teaspoon granulated sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Make the dressing by combining the olive oil, lemon juice, white wine vinegar, lemon zest, garlic, sugar, salt and pepper in a small bowl. Whisk together.
- In a large salad bowl, toss together chopped kale, craisins, apple cubes. almond and feta. Toss to combine.
- Pour dressing over salad and toss just before serving.
