Sweet and Tangy Kale Salad

Ingredients

  • 6 cups kale roughly chopped
  • 2 medium apples diced
  • 3/4 cup craisins
  • 1/2 cup almonds toasted
  • 3/4 cup crumbled Feta cheese
Dressing
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons white wine vinegar
  • 1 teaspoon lemon zest
  • 2 teaspoons minced garlic  about 2 cloves
  • 2 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Make the dressing by combining the olive oil, lemon juice, white wine vinegar, lemon zest, garlic, sugar, salt and pepper in a small bowl. Whisk together.
  2. In a large salad bowl, toss together chopped kale, craisins, apple cubes. almond and feta. Toss to combine.
  3. Pour dressing over salad and toss just before serving.
