Cherries:
- 2 ½ cups sweet cherries, pitted, halved & roughly chopped
- 2 tbsp white sugar
- Juice from 1/2 small lemon
- ½ tsp almond extract
- 1 tbsp cornstarch
Shortbread Crust & Topping:
- 1 cup flour
- ¼ cup almond flour
- ½ cup white sugar
- ½ tsp baking powder
- pinch of salt
- ½ cup unsalted butter, cut into small pieces
- 1 egg yolk
- 1 tsp almond extract
- ¼ cup thinly sliced almonds
Instructions
- Preheat the oven to 350 degrees. Line an 8x8 baking dish with a bit of parchment paper, if desired. Lightly spray the baking dish and parchment with cooking spray.
- Combine the cherries, sugar, cornstarch, lemon juice, and almond extract in a bowl; mix well and set aside.
- Pour the flour, almond flour, sugar, baking powder, and salt together in the bowl of a food processor; pulse until well combined.
- Add the chopped butter, egg yolk, and almond extract; pulse until the dough is crumbly.
- Press 2/3 of the dough in the bottom of the prepared baking dish to form the crust.
- Top the crust with the cherries and their juices.
- Crumble the remaining dough evenly over the cherries then top with thinly sliced almonds.
- Place into the oven and bake until golden brown and bubbling, about 35-40 minutes, turning the dish halfway through baking.
- Remove from the oven and allow to cool on a wire rack until cooled. Cut and serve. Enjoy.
