  • 2 cloves garlic (minced)
  • 2 teaspoon fresh ginger (grated or finely minced)
  • 2 tablespoons Sweet chili sauce
Asian Slaw
  • ½ cup purple cabbage (shredded)
  • ½ cup green cabbage (shredded)
  • 2 carrots (medium sized, shredded)
  • 3 green onions (thinly sliced)
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
Tacos
  • 18 wonton wrappers
  • cooking spray (or oil, for cooking wonton tacos shells)
  • Sweet chili sauce (for dipping)
  • cilantro (or parsley)
  • sesame seeds

Instructions

    Cup of Yum
  1. Preheat oven to 375°F. Spray wonton wrappers on both sides with cooking spray or brush with cooking oil of choice.
  2. Turn a mini muffin tin upside down and press the wonton wrappers between two muffin tin cups to make a taco shell. Bake for 8-10 minutes, watching them closely so they don't burn. Depending on the size of your muffin tin you may need to cook the wonton wrappers in batches.
  3. Mix diced chicken in a large bowl with the hoisin sauce, sesame oil, soy sauce, garlic and ginger.
  4. Heat a large pan on high heat with a teaspoon of cooking oil and cook chicken for 8-10 minutes, stirring frequently until cooked through.
  5. Once the chicken is cooked through turn off the heat and stir in the sweet chili sauce. Toss the chicken until evenly coated.
  6. To prepare the coleslaw shred your cabbage and carrots, or use store bought coleslaw mix.
  7. In a large bowl combine the coleslaw mix, green onions and all of the dressing ingredients.
  8. Mix until well combined.
  9. Assemble your tacos by adding a spoonful of the chicken mixture to each wonton shells, then top with coleslaw, drizzle with sweet chili sauce and sprinkle with cilantro or parsley and sesame seeds. Serve and enjoy!
