Sweet Pork Tacos
These tacos are filled with tender sweet pork, Monterey Jack cheese, and pineapple salsa. The refreshing salsa topping makes these tacos extra delicious!

Ingredients
- pork slow cooker, sweet, 1 recipe
- 12 corn tortillas small, white
- 2 cups Monterey jack cheese shredded
Pineapple Salsa
- 3 cans (8 ounces, each) pineapple tidbits OR 3 cups fresh pineapple, diced
- 1 bell pepper diced, small red
- 2 Tablespoons onion red, chopped
- 1 jalapeño chopped (seeds and ribs removed, small
- 1/4 cup cilantro chopped
- 1 Tablespoon lime juice fresh
Instructions
- Make the sweet pork according to directions.

Pineapple Salsa
- Combine all of the pineapple salsa ingredients in a medium bowl. Gently stir to combine. Cover with lid and refrigerate at least 2 hours before serving.
- Warm the corn tortillas on a skillet or griddle. (You can also deep fry the tortillas.)
- Top each tortilla with a helping of sweet pork, Monterey Jack cheese, and desired amount of pineapple salsa. Enjoy!
Notes
- This recipe yields around 12 tacos, depending on how much pork you fill them with.
