Sweet Potato and Ground Beef Casserole Recipe

Ingredients

  • 1 Tbsp avocado oil
  • 1 medium-sized yellow onion chopped
  • 1 pound ground beef
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • ¾ tsp sea salt to taste
  • ¼ tsp black pepper to taste
  • 2 medium-sized sweet potatoes chopped
  • 5 ounces baby spinach
  • 1.5 to 2 cups grated cheese*

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Heat the avocado oil in a large Dutch oven (or thick bottomed pot or large skillet with a deep lip) over medium high heat. Add the chopped onion and sauté, stirring occasionally until softened, about 3 to 5 minutes. Add the garlic and ground beef and use a spatula or a wooden spoon to break the meat into small chunks. Brown the meat for a couple of minutes before stirring in the chopped sweet potatoes, Italian seasoning, salt, and pepper. Cover the pot with a lid and cook, stirring occasionally, for 5-10 minutes, or until the sweet potatoes have begun to soften.
  3. Add the spinach to the pot and cover it with the lid. Cook for 1 to 2 minutes, until the spinach has wilted.
  4. Transfer the sweet potato and ground beef mixture to a large casserole dish and spread it into an even layer. Sprinkle the top with grated cheese.
  5. Bake on the center rack of the preheated oven for 15 to 25 minutes, or until the cheese has melted and has reached your desired level of golden brown deliciousness.
  6. Serve in big bowls, and enjoy! You can sprinkle chopped green onions over this delicious recipe if you'd like.
  7. Store leftovers in an airtight container in the refrigerator for up to 5 days.

Notes

  • *I use raw cheddar cheese. You can also use mozzarella cheese, jack cheese, or cheddar cheese. Any kind of melting cheese works! To lower the calories and fat content, use 1 cup of cheese.
