Ingredients

  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup whole milk
  • 1 cup sweet potatoes , cooked and mashed

  1. Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan with cooking spray, set aside.
  2. Add sugars and oil to a large bowl and beat well. Add eggs one at a time, mixing until combined.
  3. In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with milk. Fold in sweet potatoes.
  4. Pour batter into greased loaf pan and bake for about 55-60 minutes, until golden and inserted toothpick comes out clean with moist crumbs.
