Sweet Potato Burrito Bowls

Ingredients

  • 4 sweet potato peeled and diced, medium
  • 2 tablespoons neutral cooking oil generic cooking oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • salt to taste
  • black pepper to taste
  • lime juice of 1/2 lime
  • 1 cup black beans
  • ½ cup guacamole store-bought or homemade
  • 4 flour tortilla burrito-sized
corn salsa
  • 1 cup sweet yellow corn
  • ⅓ cup red onion diced
  • ¼ cup cilantro roughly chopped
  • lime juice of 1/2 lime
  • salt to taste
  • 2 cups white rice steamed

Instructions

  1. Place sweet potatoes in a bowl. Drizzle with oil, then add chili powder, cumin, garlic powder, cumin, lime juice, and salt and pepper to taste. Toss to coat well. Transfer to a skillet and saute over medium-high heat for 6-8 minutes until easily pierced with a fork.
  2. Stir together all ingredients for the corn salsa.
  3. Assemble burrito bowls by placing tortillas in the bottom of four bowls. Add rice, black beans, corn salsa, sweet potatoes, and guacamole. Serve immediately.
