Sweet Potato Casserole

Sweet potato casserole is a classic American recipe that you can find on most Thanksgiving tables and throughout the holiday season.

Ingredients

  • 6 lb sweet potatoes
  • 1 cups dark brown sugar
  • ½ cup whole milk
  • 8 tablespoons unsalted butter , melted
  • 2 large eggs , lightly beaten
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups marshmallows

Instructions

  1. Bake sweet potatoes at 400F/200C for 1 hour or until tender.
  2. Let stand until cool to touch, then peel and mash the sweet potatoes.
  3. Reduce oven temperature to 350F/180C.
  4. Grease a 11x9 inch (30x20cm) baking dish with nonstick cooking spray or butter.
  5. In a large bowl, stir together the mashed sweet potatoes, brown sugar, milk, melted butter, eggs, salt, and cinnamon until combined. Pour mixture into the baking dish.
  6. Add the marshmallows on top.
  7. Cover with aluminum foil (making sure it does not touch the marshmallows), and bake for 30 minutes. Uncover, and bake 10 additional minutes.
