Sweet Potato Casserole with Pecan Topping
This Sweet Potato Casserole with Pecan Topping is a family favorite.
Ingredients
- 4 cups sweet potatoes mashed
- 1 cup white sugar
- 1 teaspoons vanilla
- 4 egg
- 4 ounces butter
- 1/3 cup milk
- 1 cup coconut optional
Topping
- 1/2 cup brown sugar firmly packed
- 1/4 cup flour
- 1 cup pecans chopped
- 2 1/2 tablespoons butter
Instructions
- Beat casserole ingredients in mixer until well blended. Put unto a 2-qt. long casserole dish that has been well greased with butter. Mix and spread topping ingredients over the sweet potato mixture. Bake in 350 degrees oven for 55 minutes.
