Ingredients

  • 1/3 cup butter melted, unsalted
  • 1 cup pecans , roughly chopped
  • 1/2 cup milk whole
  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 cups sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1 cup sweet potato canned, puree
  • 2 teaspoons vanilla extract
Topping:
  • 1 1/2 cups light brown sugar , packed
  • 1 teaspoon cinnamon
  • 1 1/2 cups water hot

Instructions

  1. Preheat oven to 350 degrees.
  2. Spread melted butter and chopped pecans over a 9x13 baking pan.
  3. In a large bowl whisk together the milk, vanilla and sugar until mostly dissolved.
  4. Add in the sweet potato puree, flour, baking powder, salt, cinnamon, ginger, nutmeg, then whisk until just combined and no dry streaks remain.
  5. Spoon batter over the butter, careful to not mix the butter in.
  6. Mix the brown sugar and cinnamon and sprinkle it over the batter.
  7. Gently pour the water on top.
  8. Bake for 45-50 minutes.
