Ingredients

Sweet Potato Fries
  • 3 sweet potato large
  • ¼ cup olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Paprika Garlic Aioli
  • 1 cup mayonnaise homemade
  • 1 ½ teaspoon smoked paprika
  • 2 teaspoon garlic minced
  • ½ teaspoon garlic powder
  • black pepper a pinch
  • salt a pinch
  • 1 Tablespoon lime juice

Instructions

  1. Preheat oven to 400 F. Line two large baking sheets with parchment paper.
  2. Wash and peel the potatoes. Cut the sweet potatoes in 1/4-inch long slices and then in 1/4-inch wide strips. Place them in a large bowl and toss them with about 1/4 cup olive oil to coat. Sprinkle with paprika, garlic powder, rosemary, salt, and pepper, and toss to coat.
  3. Arrange the sweet potato fries in a single layer in both baking sheets and don't overcrowd.
  4. Bake in a preheated 400 F oven for 30 minutes, turning halfway through. 
  5. Let the sweet potato fries rest for about 10 minutes before serving them. This will help them crisp up a little bit more.
Paprika Garlic Aioli
  1. Mix all ingredients in a small bowl. Serve with baked sweet potato fries.
