Sweet Potato Gratin with Italian Sausage and Spinach

This recipe is sweet, savory and jam packed with flavor and nutrition. It makes a wonderful side dish or an excellent meal in itself. In this simple recipe, sweet potatoes, gruyere cheese, Italian sausage, and spinach are topped with a garlicky cream sauce to create a delicious twist on the classic potato au gratin casserole.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound sweet Italian sausage
  • 8 ounces fresh spinach
  • 2 cups heavy cream
  • 4 tablespoons butter
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme leaves or more to taste
  • 2 pounds sweet potatoes peeled and thinly sliced with a mandoline.
  • 1½ cups gruyere cheese shredded
  • 2 teaspoons Italian seasoning plus more to garnish
  • sea salt and pepper to taste

  1. Preheat the oven to 400 degrees F. Grease a baking dish with cooking spray.
  2. In a large skillet, heat olive oil over medium-high heat; brown Italian sausage, breaking it into pieces as it cooks, about 8 minutes. Add in spinach and season with salt and pepper.
  3. Combine cream, butter, and garlic in a saucepan. Bring to a simmer; remove from heat and mix in thyme, salt, and pepper.
  4. Arrange ½ of the sweet potato slices in the prepared baking dish; cover with ½ of the Gruyere cheese and the sausage and spinach mixture. Pour ½ of the cream mixture on top.
  5. Arrange remaining sweet potato slices on top and pour over the remaining cream mixture. Top with the remaining cheese and sprinkle with Italian seasoning, salt and pepper.
  6. Bake in the preheated oven until golden brown and bubbly, about 30 minutes. Set the oven to broil for 2 minutes.
