Sweet Potato Hash

Ingredients

  • 6 cups sweet potatoes peeled and diced
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons salt
  • 1/2 teaspoon paprika
  • 1/3 cup olive oil plus more for sautéing
  • 1 head garlic cloves minced
  • 1 medium onion diced

Instructions

  1. Preheat the oven to 450°F.
  2. In a large mixing bowl, combine the diced sweet potatoes with garlic powder, onion powder, thyme, pepper, salt, and paprika.
  3. Drizzle the olive oil over the seasoned sweet potatoes and toss until they are well coated.
  4. Transfer the sweet potatoes to a baking sheet and spread them out evenly.
  5. Roast in the preheated oven for 55 to 65 minutes, stirring occasionally, until the sweet potatoes are tender and the edges are crispy.
  6. While the sweet potatoes are roasting, heat a teaspoon of olive oil in a skillet over medium heat. Add the minced garlic and diced onion, and sauté until they are soft and caramelized, about 12 to 15 minutes.
  7. Once the sweet potatoes are done, remove them from the oven and mix in the sautéed garlic and onion.
  8. Serve the sweet potato hash warm as a delightful breakfast side or a main dish.
