Ingredients

  • 2 large sweet potatoes peeled and grated
  • 1/2 medium onion grated
  • 2 large eggs beaten
  • 4 1/2 tablespoons all-purpose flour
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • vegetable oil for frying
  • Applesauce for serving optional

  1. In a large bowl, mix the grated sweet potato and onion with beaten eggs, flour, salt, and pepper until well combined.
  2. Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
  3. Spoon about 3 tablespoons of the sweet potato mixture into the hot oil, flattening it into a pancake shape with a spatula.
  4. Fry until golden brown and crispy, about 3-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
  5. Serve hot with a side of applesauce if desired.
