Sweet Potato Souffle

A creamy take on a classic holiday side dish, sweet potato souffle feeds the masses and is topped with a delicious crunchy nut topping.

Ingredients

  • 6 sweet potatoes, peeled and cut into cubes
  • 1 cup granulated sugar
  • ½ cup milk
  • ½ cup melted butter
  • 1 teaspoon vanilla extract
  • 2 large eggs, beaten
  • ½ teaspoon salt
Topping
  • 1 cup dark brown sugar
  • ⅓ cup all-purpose flour
  • ⅓ cup melted butter
  • 1 cup Chopped Pecans

  1. Add sweet potatoes to a large stockpot, covering them with 1 inch of water. Bring to a boil over medium heat and cook for about 8-10 minutes or until fork tender. Drain the water and remove the potatoes.
  2. Preheat oven to 350°F. Grease a 9x13 baking dish and set aside.
  3. In a large bowl, add sugar, milk, butter, vanilla, eggs, and salt. Beat until fluffy. Add sweet potatoes and beat on low until smooth and combined.
  4. Pour into the prepared baking dish.
Topping
  1. Mix the brown sugar, flour, butter, and pecans. Sprinkle over the sweet potato mixture and bake for 36-40 minutes. Serve warm.

Notes

  • Canned yams. You can use unsweetened canned yams, drained, in this recipe. No need to boil, simply mash enough to equal 3-3.5 cups.
