Sweet & Sour Chicken Fried Rice

Ingredients

  • ¼ cup soy sauce tamari for gluten free
  • ¼ cup ketchup
  • 2 tbsp white wine vinegar
  • 2 tbsp sweet chili sauce
  • ¼ cup honey
  • ½ tsp red pepper flakes
  • 1 tbsp ginger grated, fresh
  • ¼ cup pineapple juice
  • 1 tbsp sesame oil
  • 1 cup onion diced
  • 1 cup bell pepper diced
  • 4 cloves garlic minced
  • 1 lb chicken breast diced, boneless, skinless
  • ½ cup pineapple diced
  • 3 cups rice If you don’t already have cooked rice in the refrigerator, start by cooking the rice, cooked

Instructions

  1. In a medium bowl, combine the soy sauce, ketchup, white wine vinegar, sweet chili sauce, honey, red pepper flakes, fresh ginger, and pineapple juice. Set aside.
  2. Add the sesame oil to a large skillet or wok on the stove over medium-high heat.
  3. Add the onion and bell pepper, cook 2-3 minutes, add the garlic and chicken, cook for an additional 5-6 minutes.
  4. Add the pineapple and sweet and sour sauce.
  5. Simmer to reduce the sauce down slightly for 3-4 minutes, then add the rice and cook for an additional 3-4 minutes.
