Sweet Tomatoes Baja Bean and Cilantro Salad

Ingredients

  • 1 can garbanzo beans
  • 1 can red beans
  • 1 can black beans
  • 1/4 cup red onion diced
  • 1/8 cup cilantro chopped
  • 1 tablespoon jalapeño pickled, chopped
Bean Salad Dressing
  • 1/4 cup red wine vinegar
  • 3 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl add vinegar, sugar, salt, and black pepper.  Stir well to combine.
  2. Rinse and drain red beans, black beans, and garbanzo beans. Place beans in a medium-sized bowl.   Add onions, cilantro, and jalapeno peppers to the beans, and mix well.
  3. Pour over bean salad dressing and toss to coat Cover and set in the refrigerator for a couple of hours to let the flavors blend.
