Ingredients

  • 1 cup  mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons vegetable oil
  • 1/4 cup sugar
  • 2 pounds broccoli florets
  • 1/4 cup raisins
  • 1/2 cup cashews
  • 1/4 cup cooked bacon bits
  • 1/4 cup chopped red onion

Instructions

  1. Place mayonnaise, apple cider vinegar, vegetable oil, and sugar in a large bowl.
  2. Beat with a whisk until the sugar has dissolved.
  3. Add broccoli, cashews, raisins, bacon bits, and red onion.
  4. Fold in the ingredients until evenly coated with the salad dressing.
  5. Refrigerate for at least 4 hours before serving.

Notes

  • If you're not a broccoli fan, you can leave it out. Just replace it with some mixed greens and enjoy it as a side salad.
  • The cashews can also be taken out if you have a nut allergy.
  • To make this salad vegetarian, you can switch to vegan mayonnaise and leave out the crispy bacon bits.
  • This keeps in the refrigerator for a couple of days wonderfully, so it is the ideal salad to make ahead of time.
