Ingredients

Chicken Kabob Marinade
  • 1/2 cup brown sugar packed
  • 1/4 cup pineapple juice
  • 5 tablespoons soy sauce
  • 2 tablespoons minced garlic
  • 2 tablespoons sesame oil
  • 1 teaspoon ground ginger
Kabob Ingredients
  • 2 pounds beef sirloin steaks cut into bite sized cubes, fat trimmed, pierced with a fork
  • 5-6 spears fresh pineapple cut into one inch chunks
  • 1 large orange bell pepper cut into large chunks
  • 1 large red bell pepper cut into large chunks
  • 1 large white onion cut into chunks

Instructions

    Cup of Yum
  1. Whisk together the beef marinade ingredients until combined. Place the beef cubes into a large Ziploc bag or a plastic container with a lid.
  2. Remove 1/4 cup of the marinade and set aside in a container for basting later while BBQ-ing, and pour the remaining marinade into the bag with the beef.
  3. Refrigerate overnight for the tastiest results.
  4. When you are ready to cook, drain the beef from the marinade. Preheat your BBQ to medium-high heat. If your BBQ grate tends to stick, grease it accordingly.
  5. Thread the beef, pineapple, bell peppers and onion onto the skewers.
  6. Place the skewers on the preheated grill, turning frequently until nicely browned on all sides.
  7. The beef can be cooked until medium-rare, and the vegetables until tender crisp.
  8. Remove and serve. The skewers will be HOT!

Notes

  • Top with chopped cilantro if desired, I love cilantro on everything!
  • Nutrition on this is very innaccurate as it doesn't take into consideration how much marinade remains on the beef
