Tabbouleh Recipe

Ingredients

  • 1/2 cup fine bulgur wheat
  • 1 cup boiling water
  • 1 cup finely diced English cucumber
  • 1 1/4 cups finely diced Roma tomatoes seeded
  • 1/2 cup thinly sliced green onions
  • 1 cup finely chopped curly parsley
  • 1/4 cup finely chopped fresh mint optional
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the bulgur wheat in a large bowl and pour the boiling water over it. Cover and let it sit for 20 minutes or until the wheat has softened. Drain any excess liquid.
  2. Add the cucumber, tomatoes, green onions, parsley, and mint to the bowl with the bulgur wheat.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss to coat.
  5. Cover the salad and chill for at least 30 minutes before serving.
