Tabouli Salad
Tabouli Salad, or Tabbouleh, is a healthy and delicious salad made from bulgur wheat, minced herbs and vegetables, and a light lemon vinaigrette.
Ingredients
- 1 ½ cup water
- 1 cup bulgur wheat red
- 1 cup parsley about 1 bunch, fresh, minced
- ¼ cup mint minced, fresh
- ¼ cup green onion thinly sliced
- 1 pint grape tomato quartered
- 1 cup English cucumber about 1 medium cucumber, deseeded and diced
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper ground
- 3 tablespoons lemon juice freshly squeezed for the best flavor
- 3 tablespoons olive oil
Instructions
- Bring 1 ½ cup water to a boil in a medium saucepan over medium-high heat. Once boiling, remove it from the heat and stir in 1 cup red Bulgur. Cover and let sit for 1 hour to soak. Once an hour is up, drain off excess water, if there is any, and fluff with a fork.
- Add the bulgar, 1 cup minced fresh parsley, ¼ cup minced fresh mint, ¼ cup thinly sliced green onions, 1 pint quartered grape tomatoes, 1 cup deseeded and diced English cucumber, ½ teaspoon kosher salt, ¼ teaspoon ground black pepper, and 3 tablespoons lemon juice to a large bowl and toss to combine. Cover and chill for 1 hour.
- Just before serving toss the salad again, adding 3 tablespoons olive oil. Season with additional salt and pepper as needed. Serve chilled.
