Taco Bites

These mini tacos bites are a simple and adorable way to serve one of everyone's favorite dishes as an appetizer instead of a main!

Ingredients

  • 1 pound lean ground beef
  • ½ cup tomato sauce
  • ¼ cup water
  • 2.5 tablespoons taco seasoning
  • 60 tortilla chips scoops, such as Tostitos
  • ½ cup cheddar cheese shredded
  • ½ cup sour cream
  • ½ cup lettuce shredded
  • 1 cup tomatoes diced

Instructions

Make the ground beef filling
    Cup of Yum
  1. In a skillet, brown the ground beef, drain the fat.
  2. Add the sauce, water, and seasoning, continue cooking until fully cooked, and thickened.
Assemble
  1. Lay the tortilla chip scoops out on a serving platter.
  2. Add the ground beef mixture to each cup.
  3. Top with cheese, sour cream, lettuce and tomato.
Serve
  1. Serve immediately.

Notes

  • Use a piping bag or a sandwich bag with a corner cut off to easily add the sour cream. If you have leftover ground beef – make more taco bites!
