Ingredients

  • 1 pound lean ground beef
  • 1 ounce envelope taco seasoning
  • ⅔ cup salsa
  • 1 can mild red enchilada sauce 10 ounces
  • 2 cups cheddar cheese shredded
  • ½ cup thinly sliced green onions
  • 8 can large canned biscuits
  • Assorted taco toppings like lettuce tomato, salsa, sour cream

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Spray a 9x13-inch baking dish with non-stick spray.
  3. In a large pan, brown the ground beef and drain off any grease.
  4. Add your salsa, enchilada sauce, and seasoning to the beef.
  5. Add in half the cheese and scallions.
  6. Cut each biscuit into eight pieces and add them to the mix.
  7. Mix everything gently.
  8. Pour the mixture into your prepared pan.
  9. Bake for 20 minutes.
  10. Remove from the oven and sprinkle the remaining cheese on top.
  11. Bake for the remaining 5 minutes.
  12. Garnish with more scallions and your favorite taco toppings.
