Taco Casserole

This taco casserole is all of the best parts of a taco served under a pile of spicy cheese, beans, and sour cream.

Ingredients

  • 1 lb. ground beef
  • 1 small yellow onion diced
  • 1/2 red bell pepper diced
  • 2 cloves garlic minced
  • 2 Tablespoons taco seasoning (or one package)
  • 1/2 teaspoon chipotle peppers (optional)
  • 1 cup water
  • 16 ounce refried beans
  • 1 cup sour cream (full fat at room temperature)
  • 2 cups cheddar cheese (grated)
Garnish:
  • 1/4 cup black olives sliced
  • 1/4 cup green onions diced
  • 1 cup Tortilla Chips or Fritos (optional)
  • 1/3 cup lettuce shredded
  • 1/3 cup Tomatoes or Salsa diced
  • 1/2 cup green pepper chopped
  • 1 Jalapeno pepper sliced

Instructions

  1. Preheat oven to 350 degrees.
  2. Add the ground beef, diced red pepper and diced onions to a large pan and cook and crumble over medium heat until the meat is cooked through.
  3. Drain the excess grease.
  4. Add 1 cup water and taco seasoning and bring to a boil.
  5. Reduce the heat and simmer for 5 minutes until it thickens up, stirring occasionally. Remove from heat.
  6. Spread the refried beans in a 9x13 casserole dish.
  7. Spread the room temperature sour cream over the refried beans.
  8. Top with cooked ground beef mixture.
  9. Sprinkle the cheese on top in a single layer and bake for 15 minutes or until the cheese is melted.
  10. After 15 minutes, garnish with fritos, lettuce, olives, tomatoes, and green onions. Serve warm.
