Taco Lettuce Wraps

A mix between tacos and lettuce wraps, these Taco Lettuce Wraps have a southwestern flavored beef filling served in lettuce leaves and topped with your favorite taco toppings. This is an easy, flavorful dinner idea.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1/2 cup onion chopped
  • 1/2 cup red bell pepper chopped
  • 2 cloves garlic minced
  • 1 1/2 lbs ground beef
  • 2 tablespoons taco seasoning
  • 1 (15 oz) can black beans drained and rinsed
  • 1 (4 oz) can diced green chiles
  • 3 romaine lettuce washed, hearts
  • diced tomatoes for serving, sliced, diced, or as specified
  • avocado
  • green onion
  • cilantro
  • lime
  • cheese

Instructions

  1. Heat the oil in a large skillet over medium heat. Add the onion and pepper and cook until softened. Add the garlic and cook an additional minute.
  2. Add the ground beef and continue to cook until the beef is browned, breaking it up as it cooks. Once the beef is fully cooked, stir in the taco seasoning. Let it cook for another minute or two.
  3. Stir in the black beans and the green chiles. Cook until heated through, then remove from the heat. 
  4. Cut the bottom 2 inches from the romaine hearts and pull part the leaves. Serve the beef mixture in the lettuce cups, and top with your desired toppings.
