Taco Lettuce Wraps
Taco Lettuce Wraps feature a flavorful ground turkey mixture seasoned with salsa, green chiles, and taco spices, combined with corn, black beans, and fresh cilantro. Served in crisp butter lettuce leaves, these wraps offer a refreshing, lighter alternative to traditional tacos. Optional shredded cheddar and sour cream add creamy and tangy notes, creating a balanced texture and flavor combination that's hearty yet fresh.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 cup salsa
- 1 green chile 4-ounce can, diced
- 1 tablespoon taco seasoning
- 1 corn kernels 15-ounce can; drained
- 1 black beans 15-ounce can, drained and rinsed
- 2 tablespoons cilantro fresh, chopped leaves
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 1 butter lettuce head
- ¼ cup cheddar cheese optional, shredded
- ¼ cup sour cream optional, reduced-fat
Instructions
- Heat olive oil in a large skillet over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat.
- Stir in salsa, green chiles and taco seasoning until heated through, about 2-3 minutes. Stir in corn, beans and cilantro until well combined; season with salt and pepper, to taste.
- To serve, spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style, garnished with cheese and sour cream, if desired.
