Taco Salad
All of your favorite taco flavors, in salad form! This Taco Salad is a taco lovers favorite, and it an easy weeknight meal. It’s also great to set out buffet style so everyone can top their salad with their own favorites!
Ingredients
- 1 tablespoon olive oil
- 2 1/2 lbs ground beef lean
- 2 tablespoons taco seasoning
- 2 teaspoons chili powder
- 2 teaspoons cumin ground
- salt
- black pepper
- 1/4 cup water
- 3 romaine lettuce washed and chopped, hearts
- 12 oz. tortilla chips
- 8 oz Colby jack cheese shredded
- 1/2 red onion halved and sliced
- 3 tomato diced, medium
- 1 1/2 cups Chipotle ranch dressing
- avocado cilantro, lime wedges, sour cream, etc, optional, diced, toppings
Instructions
- Heat the olive oil in a large skillet pan over medium heat.
- Add the ground beef and cook until browned, breaking it up as it cooks, about 10 minutes.
- Season the beef with the taco seasoning, chili powder, and cumin. Season to taste with salt and pepper. Add the water and let the mixture cook until thickened, about 5 minutes.
- While the meat cooks, prep your salad ingredients.
- To assemble the salads, fill a bowl with some of the lettuce. Crush some of the tortilla chips and place on top. Top with ground beef, cheese, onions, tomatoes, and any other desired toppings. Drizzle with some of the salad dressing.
- Serve immediately.
