Taco Soup
This delicious and easy taco soup can be made with ground beef or chicken/turkey for an incredible healthy supper for the family!
Ingredients
- 1 pound ground beef or ground chicken or turkey
- 1 medium onion chopped, white
- 1 tablespoon garlic minced
- one .25 ounce package taco seasoning mix
- one ounce can black beans rinsed
- 2 cups corn canned or frozen, drained, sweet
- one ounce can tomato sauce
- 2 cups beef broth more as needed
- one .5 ounce can tomato diced
- one ounce can green chile pepper mild, diced
- 1/3 cup cilantro chopped, fresh
- lime fresh, wedges
- Tex Mex cheese shredded
- avocado diced
- corn tortilla chips
Instructions
- In a large soup pot over medium-high heat, brown the beef along with the onion. Drain excess fat, then sauté the garlic until fragrant. Add in the taco seasoning and sauté for another 1-2 minutes.
- Add in the beans, corn, tomato sauce, broth, diced tomatoes, and chile peppers. Cover and simmer for 15-20 minutes. Remove from the heat and stir in the cilantro.
- Ladle into serving bowls and top each soup with the cheese, chopped avocadoes and tortilla chips/strips. Serve with lime wedges on the side for each person to squeeze into their soup once served.
