Taco Villa Inspired Mexican Pizzas with Creamy White Sauce

Ingredients

White sauce
  • 2 tablespoons butter
  • 1/2 cup diced white onion
  • 1/3 cup flour
  • 1 cup milk

  • 8 inch flour tortillas
  • vegetable oil for frying
  • 1 ounce can diced green chilies
  • 1 cup shredded cheddar cheese
  • picante sauce to taste

Instructions

  1. To make the white sauce, melt the butter in a saucepan over medium heat. Add the onion and sauté until translucent. Add the flour and cook, stirring, until fragrant like pie crust. Gradually add the milk, stirring constantly until the mixture thickens to a pudding-like consistency. Remove from the heat and set aside to cool.
  2. In a large skillet, brown the ground chuck over medium heat. Add the onion and cook until softened. Season to taste with salt and pepper.
  3. In a separate skillet, lightly fry each tortilla in a small amount of vegetable oil until slightly crisp.
  4. Preheat the oven to 350°F.
  5. To assemble, spread each fried tortilla with a layer of cooled white sauce. Add the ground beef mixture, sprinkle with green chilies, and top with cheddar cheese.
  6. Place them on a baking sheet and bake until the cheese melts, about 5 to 10 minutes. Remove from the oven and drizzle with picante sauce.

Notes

  • The key to this recipe is the balance between the white sauce and the seasoned beef. Too much sauce will make the tortilla soggy, while too little won't deliver the signature creaminess this dish is known for. For the crispiest tortillas, make sure your oil is hot enough before frying. If it's not hot enough, the tortillas will absorb too much oil and become greasy rather than crisp. You can prepare all components in advance and assemble just before serving for a quick meal solution. For an extra flavor boost, add a pinch of cumin to your beef as it cooks.
