Takeout Pork Fried Rice

Ingredients

  • 1 pound boneless pork loin chops cut into 1/2-inch cubes
  • 2 tablespoons vegetable oil
  • 2 tablespoons sesame oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1 1/2 cups frozen peas and carrots
  • 2 tablespoons minced garlic 
  • 4 eggs beaten
  • 1/2 cup green onions chopped
  • 4 cups cooked rice
  • 1/4 cup soy sauce (regular or low sodium)

Instructions

  1. Heat a large skillet or wok over medium-high heat and add cooking oil and sesame oil.
  2. Once heated, add the pork cubes and season with salt, pepper, and ginger. Sauté and cook for 5-7 minutes.
  3. Reduce the heat to low, remove the pork from the skillet and set aside. Add the peas and carrots and sauté for about 2 minutes.
  4. Add the minced garlic and sauté for about 1 minute.
  5. Move the vegetables to the side and pour in the beaten eggs. Cook alongside the vegetables.
  6. Lower the heat to medium-low and add the cooked pork, rice, and green onions. Stir carefully to combine.
  7. Drizzle with soy sauce and heat thoroughly.
  8. Serve hot and enjoy!
